let's eat some pie.

at least half of it. once upon a time i decided to create a food blog. the name i wanted was peace love good food. said name was taken. the owner of the blog just happened to be awesome. i now blog creep regularly. a few weeks ago she posted a recipe for fresh berry pie. pie. are you kidding me. well, while scanning stuff at work as berries would come through the lanes it was as if they were taunting me. i had to make pie.
and i'm SO GLAD i did. it was the perfect summer fix, light and fruity. i told myself since it was fruit based it obviously was healthy for you. right? right.

Fresh Berry Pie
recipe via peace love good food



Preheat oven to 450 degrees.
Crust:1/2 cup canola oil2 Tbsp. milk1.5 cups flour1.5 Tbsp. sugar1 tsp. salt
Mix flour, sugar and salt together in a small mixing bowl. Set aside. In a medium mixing bowl, whisk together canola oil and milk. Slowly add the flour mixture to the oil & milk mixture. Mix until it becomes thick and dough like, then transfer to a 9" pie dish. Starting from the center of the dish, spread the crust until it is covering the entire dish. Bake for 7-10 minutes, or until crust starts to brown. Let cool.
Filling:1 pint fresh blueberries1 pint fresh blackberries1 Qt. fresh strawberries, sliced3 Tbsp. corn starch3.5 Tbsp. Mixed Berry Jello1 cup sugar1 and 1/4 cups water
Wash and dry berries, then place inside crust. 
Combine starch, Jello and sugar, then set aside. In a small saucepan, bring water to a boil. Slowly add Jello mixture, stirring constantly. Return to a boil and keep it there for 1 minute. Remove from heat and cool.
Drizzle topping over berries and refrigerate for 4-5 hours before serving.'
